
Spiced millet pilaf with beetroot, feta + mint
Millet is one of my favourite gluten-free grains to work with, and to eat. It’s mild flavour makes it easy to pair with both sweet or savoury ingredients and I like to think of it as a gluten-free, nutrient dense substitute to couscous. Over the years I’ve shared tons of millet-based recipes both here and within my cookbooks, so I thought I’d round-up a few of them to help inspire you to give millet a go.
